Paris
- St. Christopher's Inn
My wife stayed there for a week last summer and loved it. It was her first time staying in a hostel and she really enjoyed it. Not the most central location in Paris but a nice, inexpensive place to stay.

- Hotel Ibis
This is a chain hotel throughout Europe and I have stayed with them in multiple countries. Good rooms, prices aren't too bad, helpful staff, and they offer a really good breakfast. There are a bunch of locations in Paris.

Amsterdam
- Hotel Clemens
Out of my 4 trips to Amsterdam, this place was my favorite hotel. They only have like 8 or 9 rooms so it is small and quiet. The rooms come with a tv, a mini fridge, a safe, an awesome included breakfast, and a clean room and towels everyday. About a 5 minute walk from Dam Square and the Red Light District.

- Hotel Ibis
I've stayed at the one near the airport and the one next to Central Station. Both were great although the one next to Central Station can be a bit noisy if your room faces the train tracks.

- St. Christopher's Inn
Have not stayed here and do not know anyone that has either but if it's anything like the one in Paris, it should be a good place to stay.

These are just a few of the places I've stayed that I would recommend in those cities. There are plenty of websites to find good deals on all kinds of hotels and hostels. I like to use venere.com to book hotels when I travel to Europe. They always seem to have great deals and are easy to use. But like I said, there are plenty of other sites with deals on all kinds of hotels so if you do a little searching online, you should be able to find the right hotel or hostel for you.

We're staying at the Novotel Paris Vaugirard Montparnesse over New Year (http://www.novotel.com/gb/hotel-1978-novotel-paris-vaugirard-montparnasse/index.shtml) and the rates were really quite reasonable considering it's central loction.

We've booked 8 nights from 30/12 and it was about $AUD1800.
