There is probs something somewhere on here about this but ...

my partner and i are planning on going on the NZ Grand Explorer trip next sept or oct (dependant on family arrangements) and were wondering weather we will be able to stay in the same room together the whole trip if we book twin??

Twin -> you'll have your own room for the entire tour except possibly for the overnight overnight Milford Sound cruise where you may have to quad.

i just read somewhere that sleeping arrangements are gender based. because my bf and i have booked twin share we will be in togethere right?
