The extra options for Canada & the rockies are quoted in US$ and Canadian$, which will we be paying the TM with? Or do we pay them with both?

On Canada and the Rockies all the excursions are paid for in Canadian Dollars.....

Here is the deal about using USD in Canada ( completely separate advice from paying for excursions): You can use USD in a lot of places in Canada from coffee shops to department stores. I've only a a few rare cases where I was unable to pay for something in USD. But, keep in mind that all vendors will have a set exchange rate that maybe not be all that great. On the flip side, don't try and purchase anything in the USA with CAD... I've never had it work. I once tried to slip in Canadian change and was caught!

I work in a grocery store in Canada. We take USD but at a set rate. Change is more than welcome.

On the flip side, i was talking to a woman who just got back from the states. She was paying for fast food and the cashier wouldn't accept a canadian penny.
