Also...does anyone know when we book the optional excursions? Has anyone heard of good ones to do?

I'm from Melbourne, Australia. I think we pay cash at the start of the trip for the optional excursions and i've heard that the canal bike tour in Amsterdam is a must and the group meals are worth doing to get to know everyone. SO EXCITED! Congrats on your graduation!
